Lapsi, Labsi, Lausi,  (लप्सी, लब्सी, लउसी) - Nepalese Hog Plum Hog plum is a deciduous tree reaching 15–22 metres (49–72 feet) in height. The bark is deeply fissured. The plant typically drops most of its compound leaves before flowering. The drupe fruits are about 4 cm (1.6 inches) in length and have a leathery yellow-green skin. Common Name: Nepalese Hog Plum Botanical Name: Choerosopondias axillaries Roxb. Learn APPLE AND CINNAMON CHICKPEA CAKE Recipe


Made with chickpeas because the ‘secret’ ingredient, this vegan APPLE AND CINNAMON CHICKPEA CAKE Recipe is in the rich chocolate flavor and moist, delicious and healthy at an equivalent time! It’s an ideal high protein and dairy-free dessert to enjoy with a cup of tea. 

I hope you'll sense my excitement through this post, because today we’re making cake. And not just any cake – a chickpea cinnamon apple cake.

It’s three amazing things in one: cinnamon, apples, and cake. Actually, four amazing things, because chickpeas are pretty incredible too.

Ingredients

  • 450g can chickpeas, drained, rinsed and patted dry
  • 1/2 cup no added sugar or salt nut &/or seed butter (such as Mayver’s Original Super Spread)
  • 1/4 cup honey
  • 1/2 tsp vanilla bean paste or 1 tsp vanilla essence
  • 1/4 tsp baking powder
  • 1/4 tsp bi-carb soda
  • 1/2 large red apple, cored and thinly sliced
  • 1 tsp cinnamon
  • Dollop plain natural or Greek curd, to serve well
  • 1 normal egg

Method

  1. Pre-heat oven to 180 degrees Celsius. Line the bottom and sides of a small round cake tin (approx. 18 cm in diameter) with baking paper.
  2. Place chickpeas, nut butter, honey, vanilla, egg, baking powder and bi-carbonated soda in a food processor. Blend until smooth.
  3. Pour cake batter into cake tin and top with apple slices arranged in a pinwheel shape. Sprinkle with cinnamon.
  4. Bake for around 50 minutes, or until cake is golden brown and a skewer comes out clean. Allow to cool in tin for 5 minutes before moving to a wire rack to cool completely. Serve with a dollop of curd.
